I love to make healthy treats for my kids. Theses mini muffins are gluten free, dairy free, and only have a bit of natural honey and maple sugar. No white sugar ever in my baking. Here’s what I did…
- 3-4 bananas mashed
- 2 cups brown rice flour
- 1/4 cup ground flax
- 1/4 cup coconut oil
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- sprinkle of cardamom
Mash all this together, then add
- 1/2 cup chocolate chips
Fill into 24 mini cupcake liners and then Bake on 350 degrees for about 18 minutes.
Let cool and serve. Yum! xo
