mainI love to make healthy treats for my kids. Theses mini muffins are gluten free, dairy free, and only have a bit of natural honey and maple sugar. No white sugar ever in my baking. Here’s what I did…

  • 3-4 bananas mashed
  • 2 cups brown rice flour
  • 1/4 cup ground flax
  • 1/4 cup coconut oil
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • sprinkle of cardamom

Mash all this together, then add

  • 1/2 cup chocolate chips

IMG_3697 (2)Fill into 24 mini cupcake liners and then Bake on 350 degrees for about 18 minutes.

Let cool and serve. Yum! xo
